YAM KHEES

This dish is kinda snack, but people from Maharashtra eat this as breakfast too. My neighbor aunty in Hubballi is from Sangli. And every Friday, they eat this or sabudani khichdi for thier breakfast. She gives a little of it to us because my mom loves this. So, I thought I must give it a try and the taste was just bliss!!! These Marathi people add powder of roasted peanut in almost every dish and that gives the edge to the dish.


Nutritional benefits: 100g of yam gives, 111kcal of energy, 26g of carbohydrates, 1.4g of protein and 0.1g of fat.

· Yams are rich in fiber, vitamins and minerals like potassium, manganese, copper, and vitamin C.

· Yams contain a unique compound called diosgenin, which may enhance memory and brain function.

· Yams may help ease the symptoms of menopause. Still, studies must be carried out to support the claim.

· Animal and test-tube studies suggest that the antioxidants in yams may have anticancer effects. Still, human studies are lacking.

· Several animal studies have found that yams improve blood sugar control and weight loss. This might be because of the resistant starch and other fiber contents.


Ingredients:

· Yam (grated) – 2-3 in number

· Powdered roasted peanut – 2 Tbsp

· Sugar – 1 tsp

· Oil – 1 tsp

· Cumin seeds – 1 tsp

· Asafetida – ¼ tsp

· Green chili – 2-3 in number

· Ghee – 1 tsp

· Lemon juice – 1 tsp

· Salt to taste

· Coriander leaves for garnishing


Method:

1. Take a bowl, add grated yam, salt, sugar and powder of roasted peanuts, mix it well and let it rest for 5 minutes.

2. In a kadai, add oil, cumin seeds and asafetida. After the cumin turns brown, add green chili and sauté it.

3. Next add, the yam mixture to the kadai and give it a nice mix.

4. Keep on mixing it until you know the yam is cooked.

5. Off the flame and then add lemon juice and coriander leaves.

6. While serving, add a teaspoon of ghee on top. Enjaaayy!!
