RAGI PANCAKE

Ragi (finger millet) pancake is a sweeter version of ragi dosa. Hehe, just added a small healthy and yummy twist to the actual pancake. And of course, a vegetarian one! A very simple, easy and quick recipe.

Nutritional benefits: 100g of ragi gives 328kcal of energy, 72g of carbohydrates, 7.3g of protein, 1.3g of fat and 2.7g of fiber.

  • Ragi is gluten free and hence people with gluten allergy or intolerance, ragi is the healthiest option.

  • Ragi is rich in magnesium (137mg/100g), which helps pancreas to secrete insulin. Hence, it would help diabetes patient to include ragi other than wheat. Magnesium also helps in keeping your heart healthy.

  • Ragi is rich source of calcium (344mg/100g). Therefore, it helps in strengthening your bones and teeth along with phosphorus.

  • Ragi has a good amount of fiber which helps in reducing constipation and aid in weight loss too.

  • There is a research study done on ragi which states that ragi has antioxidant properties which helps in reducing the oxidative stress and cancer.


Ingredients:

· Ragi flour – 1 cup

· Wheat flour – 1 cup

· Jaggery – ½ cup

· Baking powder- 1 tsp

· Milk – 1 cup (for mixing)

· Butter – 1 tsp

· Salt to taste


Method:

1) In a large bowl, add ragi and wheat flour, baking powder, jaggery and salt.

2) Mix it all together and form a batter like consistency using milk and water. Add melted butter to it.

3) In a pan, add one scoop of this batter (do not spread it much) and cook on both sides. You can use ghee or butter for greasing.

4) Enjoy it with honey, maple syrup or chocolate sauce!! YUMM!
