ALLUM CHUTNEY (GINGER CHUTNEY)
I am doing my masters in Hyderabad and the best part of it is food! I stay in hostel and the mess food is so delicious that when I am back home for holidays, I miss hostel food. We all wait for weekends because they will Pesarattu and Allum chutney! Literally finger licking good. Just 15mins and the chutney is done.

Nutritional benefits:
100g of ginger contains, 2.3g of protein, 0.9g of faat, 12.3g of carbohydrates and 67kcal of energy.
Ginger has a bioactive compound called “gingerol” which has powerful antioxidant and anti-inflammatory properties.
In few studies done on animals and humans, ginger has helped in weight loss and prevent obesity by increasing the number of calories burned or by reducing inflammation. However additional studies are required.
Ginger helps in reducing the symptoms of osteoarthritis (especially of knee).
There are some evidences which shows ginger helps to lower blood sugar levels and improve various heart disease risk factors in people with type 2 diabetes and helps in reducing LDL (bad) cholesterol, total cholesterol and blood triglycerides levels.
Ginger may help fight harmful bacteria and viruses, which could reduce your risk for infections.
Ginger appears to speed up emptying of the stomach, which can be beneficial for people with indigestion and related stomach discomfort.
Ingredients:
· Ginger – 2-3 inch (roughly cut)
· Garlic – 2-3 cloves
· Channa dal – 2 tsp
· Black gram dal (urad dal) – 2 tsp
· Cumin seeds – 1 tsp
· Coriander seeds – 1 tsp
· Fenugreek seeds – ½ tsp
· Red chilies – 3-4 in number
· Tamarind – 1 tsp
· Jaggery – 2 tsp
· Oil – 2 tsp
· Salt to taste
Method:
1. In a kadai, add oil, ginger and garlic, roast it till the garlic is slightly brown.
2. Remove the ginger and garlic and add in the blender.
3. To the same oil add the seeds and dals with red chilies. Roast it till its slightly brown and transfer it to the same blender.
4. Let the mixture cool. Then add tamarind, jaggery and salt.
5. Add little water if needed. Grind it to thick, smooth paste and chutney is ready to serve!
6. Enjoy it with dosa, idli, chapathi or even rice.
