AAM KI LAUNJI
Aam ki Launji is an instant raw mango chutney. It is a traditional dish of Rajasthan. It is a sweet, spicy and sour chutney, goes with dosa, chapathi, even rice. As you all know, I love cooking, so, midnight is the time when I crave for something but as I stay in hostel, I cannot cook at that time. So, I just watch food videos and satisfy my cravings. That is when I saw this recipe. I have made few changes from the recipe showed in FoodLab.com. It just takes 15 mins including preparation. You can store it in refrigerator for 3-4 months. Hope you will love it!

Nutritional benefits:
· As jaggery is used in this recipe, it is healthier than the sugar.
· Raw green mangoes are effective in decreasing gastro-intestinal troubles.
· Dry mango powder called ‘amchur’ is used to treat scurvy. Scurvy is disease that occurs due to the deficiency of vitamin C.
· Raw mango protects from negative effects of excessive heat during summer. During summer, raw mango panna (drink) is mostly prepared.
Ingredients:
Raw mango (cut uniformly) – 1 cup
Oil – 2 tsp
Mustard seeds – ½ tsp
Cumin seeds – 1 tsp
Methi (Fenugreek) seeds – ¼ tsp
Asafetida – ½ tsp
Red chili powder – 1 tsp
Garam masala powder – ½ tsp
Jaggery – ½ cup
Black salt – ¼ tsp
Salt to taste
Method:
1. In a pan, add oil. When it is heated, add mustard, methi and cumin seeds. Roast it.
2. Then add raw mangoes and mix it well.
3. Add little water just enough to half bury the mango pieces. Bring it boil.
4. Then add red chili powder, garam masala, jaggery and salt to it and cook it for 2-3 mins.
5. Add black salt and cook till the water thickens.
6. Cool completely and pour it in a jar and store it in refrigerator.
